Working Overseas: 5 Things to Know





Some of you have asked in the past
what one would need to do 
to move overseas.

I'm by no means an expert...
but as someone who has managed to move here,
I guess I have a bit of an advantage.

I've offered the little I know
 a couple of times to you in the past
-probably best on my vlog-
but with new readers
and new tides of college graduates
wanting to move somewhere exciting
comes an influx of these questions.

If you've written to me
and I haven't replied 
over the past few weeks,
I was stock-piling over the holidays
in efforts to address you in an official post.

Please forgive my tardiness
and let these five things
help kick-start your brain 
into crafting what you need to do to move
 somewhere fabulous and exotic.

1. If you want to move to a new country,
you must immigrate there legally... with a visa!


If I were to guess, I'd say about 90% of people don't realize this fact.

Maybe it's because most of us are Americans 
who can move freely from state to state
without any problem.

If we want to pack up and move to New York City,
by gosh- we can.

So it doesn't occur to us that moving to London or Paris would be any different.

I don't think I fully realized this until I had to do it myself,
so I can't blame you.

Some how in movies and books,
they skip all the red tape, biometrics & applications.

But you'll need to officially immigrate
so that you do the big stuff like be hired for a job,
open a bank account, rent an apartment and have health care.






2. They don't make it easy for you to move here.


Completing the paperwork for a visa
is the modern man's form 
of survival of the fittest.

The forms are terribly long
and you can expect as much feedback
as talking to a brick wall.

Take all the paperwork you fill out seriously.

Filling in the wrong answer
could black ball your application 
from getting processed then...
and perhaps upon future submissions.

Oh, and it's expensive...
we have to get visas for our little ladies
that will last for approximately 11 months.

It's going to cost us £1200
and then we will have to re-apply for our third visa
the following spring.



3. Consider higher education.

For any 20-something that writes me,
my best advice for moving overseas
is to come over on a student visa.

They are the most obtainable,
the easiest to process,
& the most common way
I know that other expats have moved into a country.

Many countries will offer some sort of 
"post study visa" 
that will allow you to reside in the country
for a couple of years to follow.

It's a great way to immigrate in to the country,
make a network of friends through your program,
and get your foot in the door...

Oh, and you get a degree out of it, too.

4. "But can't I just apply for a job in Europe and get a visa that way?"


When I was finishing my last semester of college, 
I remember scrolling through the French L'Oreal website
looking for potential jobs.

What my optimistic 21 year-old self didn't realize
was that I wasn't eligible to work any of these jobs...
because I didn't have a work permit.

In the UK, a job has to posted for a minimum of 90 days
before it can be submitted for a non-citizen to apply for it.

Assuming that it gets to that point,
they would then have to make a case
supporting why YOU are the only person that can fill this job
and why NO OTHER CITIZEN could also do it.

You have to be pretty specialized to work this angle.

I'm not sure how it exactly works in other EU countries,
but I know it's similar to this...
and it makes sense, I suppose.

Why give your local jobs out to other people
and let your own unemployment rates go up?

Especially since so many of these countries
are offering healthcare to their citizens.

They need them to be paying back in with income taxes 
to keep everything supported...
which is why they aren't making it easy for us adorable Americans
to fill out an application that could take away their jobs.

See what I mean? 

It kind of has to be this way.

One caveat to this is being transferred in from a large company
that has offices in both countries.

Large accounting firms, law firms & other businesses
can transfer existing employees to offices in other countries.

These are typically companies that are large enough
to support the moving costs & visas that come with immigrating.

Most of these companies offer 2-3 year moves.

It's an awesome deal 
and I'm always jealous of our friends that move this way...
they get taken care very well.



5. It's not impossible.

All of this gloom and doom talk is discouraging, I know,
but hey, look-
I'm an American and I live in London!

Obviously, there are plenty of us here, 
so it's not like the door is completely closed
to getting to move to a different country.

It's just important to know what you are up against
before you start making grand plans to move overseas...
because unless you plan accordingly,
you're only allowed to stay for 90 days on a tourist visa.

And while any 90 day vacation would be pretty sweet,
you're looking for a life overseas,
so it's important you start down the right path.

Every person's immigration story is different,
so there isn't a set formula for how to get over here.

The best I can offer is murky, muddled advice that I've gathered
over our time in England 
from our experiences
and the experiences of our friends.

While I may not be able to offer much more advice than that,
I can offer you my encouragement:
it's completely worth the struggle!

The other day I was having a really good talk with a dear friend.

Ok, so that's not the interesting part of this post.

The noteworthy part of catching up with my friend
was the articulation of a little idea
that has been bugging me in a big way lately.

It has to do with happiness
and the ever-seeking quest 
that people take to find it.

The thing is...
being happy isn't a destination that you suddenly arrive at
once you get everything that you've always wanted.

Nope. 

It's a choice that you make every day
to enjoy life as it arrives before you.



If you hold out for "happiness" to arrive
after something big happens,
you'll never find it.

Do you know why I think that is?

Because if you can't enjoy the small things in life
and be happy with the little moments & pleasures,
then you'll always be too bogged down to enjoy the really big wins in life.




Take today to find {authentic} pleasure in something simple.

Dress up something ordinary 
and revel in how good it can be.

Sleeping in.
Spooning someone you love.
Morning coffee from your favorite shop.
The ride to work in the sunshine.
A really good CD that you haven't heard since college.
A forgotten bag of jolly ranchers in your office drawer.

Whatever small thing that you can enjoy for "better than average."



Not only will it make today better,
but when you actually do strike gold in life...
it will be all the sweeter.

Downton Abbey: Back in Britain


Some of my stateside friends
were bemoaning the airing 
of Downton Abbey's Season Three premier 
here in the UK last night.

Yeah, sucks to be you America.

I'm totally kidding,
 I love America...
but it is tragic that you won't have it
until several months down the line.

When I am into a series,
whether it is book or film,
I absolutely hate when people drop spoilers.

{Wouldn't that be soooo Edith of me?}

When someone is a step ahead of me in reading or watching 
and starts a sentence with the phrase,
"I'm not giving anything away, BUT.... "
it makes me fussy.

Because, as well all know, they actually DO give something away.

With that perspective in mind,
I'm going to do my very best to keep quiet 
on the weekly happenings of Downton
until my American friends can catch up.

So since I can't tell you any details,
I'll just tell you...
the awesomeness that you fell in love with
from Seasons 1 & 2,
well... it's still there.

My mom was here watching it with me 
and we were in the zone.

You have good things waiting for you.

While you're dreaming of Season 3,

So I watched Food Inc last night.

I'm about a year late to the party on this one,
but SERIOUSLY.

It's something you need to watch
to help you seriously evaluate what you are eating.

Now, now...
don't roll your eyes at me
because I'm that girl
who is constantly filling up your newsfeed with food porn.

I'm not someone who lives by rigid diets
or can promise that I am intentional about everything I eat.

BUT, I make sure that whenever I eat something-
it's not overly processed.

I pay a little more to get a little less food
because I want to consume for food that is a higher standard.

And after watching FOOD Inc, I'm even more committed to this idea.

It's so important to support food industries that produce pure food.

I used to think we did it to help them, 
you know- support the poor little farmer & his farm.
But I've come to realize that we need to support local farmers
for the very selfish reason that our bodies need "real" food.

The US doesn't make it easy for the average family to make this choice, I know...
I noticed this when I offered to replicate the same meal I make here almost every week 
while home in the States over Christmas.

Here in England, I can roast a free-range chicken, make a salad, 
roast various organic vegetables, get a baguette & butter all for £10.

It cost me $50 to buy the same things at Whole Foods in the States.

But the standard is just so different in the UK
because the people don't put up with lower quality food.


And they might gag if the stumbled upon 
a 10 foot space section of a grocery store devoted entirely to Pop Tarts.



Anyway, it's a lot to think about...
but it's worth your time to consider.

In the meantime, here is something that you can make that is simple & delicious.

I adapted it from the amazing risotto Helena made me recently for dinner.


I know risotto can be daunting if you've never made it,
but, please, don't fear the risotto... embrace it. 






Ingredients, serves 4:

four or five cups of chicken broth/stock
butter
an onion, finely chopped
a clove or two of minced garlic
2 cups of arborio rice
1.5 cups (or a small bottle) of Champagne... or any sparkling white wine you can find afford
a bit of kosher salt
pinch of black pepper
a cup of fresh parmesan (no, not the kind from the can. the real kind.)
a handful of mushrooms, sliced (optional)
a bunch of asparagus, cut in segments & washed really well to get all crunchy dirt bits off (a tragic mistake I made the first time I made this)
lemon (but only if you have one lying around)


Method:

Get a pot of warm chicken stock simmering on your stove.
Melt a small chunk of butter in a separate stockpot over medium-high heat.
Add in a chopped onion & your garlic. Cook until the onion is transparent.
Now add in the rice and stir until the rice starts to look transparent- about 5 minutes.

Add your champagne. Stir & allow the rice to absorb the liquid.
Now ladle in a cup of warm chicken stock.
Stir in the stock. Continuously stir until the stock is absorbed.
Continue this step several times until the rice is softened upon taste... you may think it will never happen, but it will! It just takes some love & about twenty minutes. Just keep stirring & loving on it.

Meanwhile in a skillet, toss in the lardons (pancetta/bacon/whatever). Let it brown.
Remove the bacon- add the asparagus & mushrooms. Let them cook in the leftover bacon goodness
& a splash of the chicken stock. It will help soften them up as they cook. 
Squeeze a lemon wedge over them for a bit of extra flavor.

When the rice is cooked, but is still slightly firm, take it off the heat. 
Grate in your parmesan. Toss in salt to taste. Throw in pepper.
Now, add in the bacon, mushrooms & asparagus. Stir to combine. 

Serve yourself a manly portion. Feel like a lady.

It's time again. 

One more round of me pulling on my bossy pants
and telling you how to live your life.

{I do love this special time.}

After being in France for a few weeks,
I've got several opinions
that I absolutely can not let you ignore.

These are more than just suggestions...
these are lifestyle changes.

Let's start with the crepes, shall we?


I know, I know...
nutella & banana is the classic order,
but until you try this crêpe,
 I tell you friend, you have not lived.

They grill the almonds. 
They grill them.

It's just... 
Well, just promise me you'll try one.

Valentine's Day is approaching.
I know some people out there don't like it, 
but we are going to have to agree to disagree on this day.

I have big feelings about this holiday,
and being in Paris, may only deepen them.






This picturesque restaurant hidden in the 14th
 is what Parisian Valentine's dreams are made of.

Le Coup Chou is the dreamiest destination for dinner in Paris.

Each cozy room is oozing with fabulous understand beauty...
and please don't mention the boeuf bourguignon or creme brulee,
I might get emotional.

Dinners start at €26 for two courses/ €32 for three.
Reservations recommended.





Flowers are so expensive on Valentines Day,
but if you're going to spend the money
 (or have someone else spend it on you)...
why not invest in a gorgeous handmade arrangement by Diane James?

No more complaining about just throwing them out in a few days,

Make Your Life Better- Volume 3


It's me again,
Bossy Pants McGee.

I've got a few items 
on my mind that I need to discuss with you.

After a few weeks on the road
and combing through London & Paris,
I've got a few gems
that I want to pass out from my mental treasury.






Sometimes one of the happy burdens you bear
when living in an awesome city and having people visit you
is revisiting sites over & over {& over} again.

{a.k.a. I've been to the Tower of London five times in three weeks.}

This week, I was taking a group through the Tower
and our Yeoman {"Beefeater"} invited us to Sunday service in the Tower's Chapel Royal.

Um... yes, please.

So we went this weekend, 
and it was one of the most amazing things I have done in London.

Here's the run-down:
You bypass all the long lines of tourists, walk through the gates {free!}
and get to attend the intimate matins service in one of the Queen's royal chapels.

{There are only six of her chapels, afterall.}

Our Beefeater, Peter, & the Vicar were so pleased to see us
that they took us on a private tour through the chapel
to see the burial spot of Anne Boleyn & the off-limits site of Thomas Moore's memorial.

Amazing. 

I highly, highly recommend 
seeing the Tower of London in this special way.



When girls get flowers from a guy,
it makes them feel like a million bucks.

Unfortunately for most of us,
 that jackpot may only hit every 2 or 3 years.

The other night when I was walking through Liberty,
I discovered the wonderfulness of their florist, Wild at Heart.

I'd always thought it would be way out of my price range,
but they had some make-me-feel-like-a-lady potted orchids for £10.

The boost it gives to my kitchen is fabulous,
and wish you the same amount of brightness added to your day.






Remember my sparkly orange shoes that I wore in Paris?

Well, you liked them...
so I went out and bought four pairs for four readers.

What can I say... I'm a bit of a people pleaser.

They need to be shot & packaged first, but be on the look out!

I keep seeing Facebook statuses about Pumpkin Spice Lattes....
but can I persuade you to ditch the suburbs for a taste of the East?

Head to World Market or any nearby specialty grocer
and buy yourself some masala chai.

I feel in love with it when we were in India,
and the spicy brew feels perfect here in the chilly weather.

Follow the directions, heat it on the stove...
and swap your drive-thru caloric splurge
for a healthier cup of Christmas cheer.

Your taste-buds won't regret it,
and your holiday cocktail dress won't either.






Blogging is pretty awesome.

I could get poetic & gushy on the topic, but there's really no need,
I know you all feel the same way.

We all love blogging because we can connect with cool people
and talk about awesome stuff on a revolving basis.

So what could be better than that?

Actually discussing this stuff in real life with those bloggers.

Going on your first "blate" {blogger-date} is mostly an awkward experience.

The good news is for you:
blogger dates always end up to be way fun 
and it makes blogging even better.

Think about it:
Most bloggers that can put together great posts every day 
are pretty smart, organized, & creative people.

How could they not be cooler in 3D?

Last night I got to meet up with one of my favorite bloggers, Helena,
at one of our favorite spots, Pizza East in London's Shoreditch.

I loved the first version of this post....

It was fun being so bossy.

So I'm doing it again...
and you're gonna like it!

Here are my recommendations 
(some might say, "commands")
to a better life... at least for today.

Kidding aside-
these are things that are making my days a bit brighter
as the weather is getting cooler.





The slow food movement is a rebellion against fast food...
NPR can tell you all about it.

(also written for Italy & England)
offers places you can go and stay in France
that offer food that is locally sourced
and prepared well...

{I think of it as an "agroturismo" on steroids.}

I'm dreaming of an entire trip traveling from different places
in France and England 
staying and tasting these places...
maybe you should come with me.



I was sent a bottle of Chanel's Black Pearl Nail Polish
by the lovely Anna Pettus...
and I am totally digging it.

It makes me feel like a rebellious debutante.



It's 14 days into September and you haven't made Pioneer Woman's cinnamon rolls?

What is wrong with you?

Don't convert how much butter is in the recipe. 
Just do a trust fall into the yumminess.

How To Make Espresso

Just in case you were ever too embarrassed to ever ask...

... Or have forgotten how to use it after 
a few years of pulling through the Starbucks drive-thru,

... Or maybe you were just lucky enough to have always had 
someone else make your espresso for you & never had to learn.

Whatever your excuse may be
for never learning to navigate one of these contraptions-
you now have your own guide
to making your own pot of espresso.

Here's a more detailed tutorial:

Fill the bottom up with cold water
Fill the middle section with espresso.
Screw all the pieces together.
Sit the pot on a hot stove for about five minutes.
You should hear some faint bubbling and see steam appear.
Once the bubble subsides, take a peek inside.
Your espresso will be done when the coffee stops pouring out of the center.
Remove the pot from the heat immediately.
Serve and enjoy.

Easy, delicious, cheap,
 and the perfect "shot" of Italy for your day.

Sometimes, I feel like I'm a little bossy.

Eat this.
Go here.
Try this.
Do that.

I mean, I just get really passionate about certain things
(like milkshakes & sequined dresses)
and can't stand to think that your life might be happening without them.

I know how much your blog posts have changed my life
(yeah, I'm talking about your cinnamon rolls, Pioneer Woman)...
so hopefully- 
the feeling is mutual.

If you're okay with getting pushed around a bit more,
then here are few things,
 that in my humble opinion...
might change your life for the better.



We have already discussed the coolness of maps,
but this map would be, like, the head cheerleader of all the other maps.

If maps are this wanderlust's porn,
then scratching off each country after visiting
 is my own version of strip poker. 



Chunky Monkey? Made by moi? Cheaper? Healthier? Done.

Seriously. It's already in my freezer.
 Now go put some in yours.



Last night I went to see Much Ado About Nothing at The Globe


It was a perfect night under the London summer sky, the cast was amazing,
and for £5 tickets to stand... I was feeling happy. 

("Geoffrey" from Fresh Prince of Bel Air was Leonato. Ah!)

Afterwards as I walked across the Millenium Bridge 
with St. Pauls sitting grandly before me
and Shakespeare floating through my head,  
the moment was so beautiful...
I felt overwhelmed with how beautiful life was. 

(And I got really excited about our move to London.)
